Bream is a fresh-water fish of cyprinidae. It habits in deep river vegetation in the Central and Northern Europe, also in the Caspian, Black and Azov seas, in lakes and water reservoirs. Bream feeds on molluscs, worms, maggots and small crustaceans, plankton feed.
Bream has elongated body, small head and mouth, high, not wide dorsal fin, with characteristic sulculus and scales on sides. Fish colour varies from leaden to blackish colour. Bream grows slowly, when it is 2 years of age, its weight is only 25-30 g. Adult fish can reach 45 cm in length, 2.5–3 kg weight and lives until 20 years of age.
Flesh of bream is considered to be dietary. 100 grams have approx. 105 kcal. Nutritional value and calories depend on sex and age of bream, conditions of their habitat and availability of feed, also on season when fish was caught. Bream caught during oestrum period or right after that features a low rate of calories. It contains the maximum of useful ingredients prior oestrum.
Bream flesh is an excellent antioxidant. It contains antiseptic and anti-inflammatory substances, has a positive effect on skin and mucosa. Regular use of bream helps to regulate blood sugar and prevents hormone disruptions.
